Loin, Sirloin and Tenderloin
Description
The boneless short-cut pork loin includes a pork belly band approximately 2.5 cm in width. Defatting is done as uniformly as possible and the thickness of the fat corresponds to the product code chosen. The sirloin is cut at a 90° angle to the boneless loin.
