Picnic Shoulder

Description

The pork picnic shoulder is the half of the shoulder on the shank side. A parallel cut is made in the joint of the shank. The separation of the shoulder butt and the picnic shoulder is made approximately 2 cm from the spine of the pork neck bone. The shoulder riblet is removed and the jowl is cut at the 3rd muscle. The skin remains whole.
